COOK-OFF RULES
Eligibility
Swim Club members and their guests may enter the rib contest
Cooking
Teams may prep their meat off-site, but all cooking must be done at the Swim club.
Meat
Enteries must include 6 baby backs pork ribs - Beef ribs, spare ribs, country ribs, rib tips, and all other non-baby back ribs will be disqualified!
Entries
Teams must turn in their ribs using the official box provided without any markings inside or out
Times
Drawing for entry times will be at 11:30am
Turn-in times will be either 4:30 or 5:00pm
Setup
Team may set up to cook anywhere along the perimeter of the swim club parking lot. Areas off limits are in front of the bike rack, garbage dumpster or the northern edge against the shrub line.
Judging
6 to 8 people will blind-judge entries based on 3 categories using a weighted scale
from 1-9:
Appearance (0.56)
Taste (2.2972)
Tenderness (1.1428)
Any entry with markings inside or outside of the turn-in box will be disqualified!!!
Each team will have its lowest score from each category removed before calculating final scores
Prizes
The team with the most points will be crowned "King of Lincolnshire" and receiving a trophy, plaque, and $100 in club tickets

FAQ
Can I bake or boil my ribs at home and finish them at the swim club?
No. All cooking must be done at the swim club.
Can I put garnish in my entry box?
Yes, but only green lettuce, parsley, and cilantro. Sorry, NO greenbacks allowed : )
What happens if I turn in less than 6 ribs?
The number of ribs turned in will be the number of judges that score your ribs. Judges not receiving a rib will still score appearance, but must give a score of 1 on Taste and Tenderness. Judges may not share or cut off pieces.
Can I put sauce on my ribs?
Yes. You may apply sauce to your ribs, but you may not include a container of extra sauce or pool sauce in the box.
Can I use spare ribs or beef ribs?
No. Only pork baby back ribs are permitted.
Do I have to donate ribs like previous years?
While we are not requiring teams to give ribs to the club, we do kindly ask for and appreciate any ribs you're willing donate before 5:30pm.
